Buffalo Chicken Pizza

Cooking has been on the back burner at my house lately, but there is one new recipe I have been dying to share.  JK's favorite treat at California Pizza Kitchen is Buffalo Chicken Pizza, but  it has been removed from the menu.  I couldn't let him starve, and figured it can't be that hard to replicate, so after googling and mixing a few online copy cat recipes, this is what I came up with...

2 cooked chicken breasts, cubed
1/2 cup hot sauce
1/2 cup pizza sauce
2 Tablespoons melted butter
2 Tablespoons honey
2 Tablespoon Worcestershire sauce
1 teaspoon grill seasoning
1 cup Monterey Jack cheese
1/2 cup crumbled blue cheese
1 grated carrot
1 celery stick, chopped
4 Tablespoons of Ranch dressing
* I don't usually measure, so these are just guesstimates :)

1. Preheat oven to 375
2. Melt butter in sauce pan
3. Add hot sauce, pizza sauce, honey, worcestershire, and grill seasoning.  Simmer for 5 minutes
4. Place flatbreads on cookie sheet and cover with sauce
5. Cover sauce with monterey jack cheese
6. Add chicken, blue cheese, 1/2 of the carrots and celery
7. Bake for 10-12 minutes
8. Let cool for 5 minutes and add the remaining carrots and celery and drizzle with ranch.  Enjoy!

Check out these flatbreads I found at Walmart, they are delicious and add a little something special to everyday pizzas...
The best part about this meal is I have most all of the ingredients on hand all the time, so it's easy to through together.  Not to mention, it got a thumbs up from the peanut gallery :)
